When we made the first Caramel Five Star Bar in 1989, we didn’t know what we were doing. And it’s a good thing! Otherwise, we never would have tried to make a chocolate bar the “wrong way.” Hand-mixing its thick center first (just like ice cream), then wrapping it in chocolate. Conventional wisdom said, “You can’t make a bar that way.” Turns out they were wrong . . . and deliciously so.
