In 2012, craft cider was just emerging as a phenomenon in Vermont. Our curiosity piqued, we picked up a bottle of Citizen Cider Unified Press. After a few sips, we began mulling over how to incorporate this iconic local ingredient — the apple — into our caramels. The answer was to boil down apple pressings from Happy Valley Orchard (the same apples that go into Unified Press), and create our own apple syrup. We blended this syrup with our slow-cooked caramel, adding a splash of cider at the end, and coated it all in 34% milk chocolate. That's how a fruitful collaboration began with the good people of Citizen Cider
