Sept 8, 2016:: BURLINGTON, VT – Lake Champlain Chocolates (LCC) is proud to announce the release of SILO Cacao Vodka, a new craft spirit from SILO Distillery, located in Windsor, VT. SILO’s Cacao Vodka incorporates the cacao shells from the beans used in LCC’s Blue Bandana line — a collection of award-winning craft chocolate bars sourced through direct trade with small cacao farmers.

Once the cacao beans arrive at Lake Champlain Chocolates in Vermont the shells are winnowed, or separated, to extract the nibs of the beans. The cacao nibs are used to produce LCC’s bean to bar chocolates, but the chocolate company has little use for the shell of the bean. The shells are sent over to SILO where they are infused into their award winning 100% Vermont-grown corn vodka.

“SILO approached us with great enthusiasm to create a value-added product using a by-product from chocolate making,”  says Eric Lampman, President of LCC and creator of the Blue Bandana line. “Cacao shells retain a great amount of cocoa flavor from the roasting process. SILO’s creativity to utilize this material to extract cocoa flavors from the shells is exciting and we are impressed with the resulting product.”

The Blue Bandana line has sparked innovations never imagined just a few years ago when the company first started working directly with cacao farmers. The chocolate making process has opened the door for LCC to create an ingredient— cacao nibs and shells— that bring intense flavor and something new and experimental to brewers and other craft producers. “Vermont is a small state and it’s rewarding to collaborate with other makers to create entirely new products like SILO’s Cacao Vodka,”  says Lampman.

Cacao’s smooth yet complex flavor profile makes a lovely addition to a cocktail enjoyed best on a brisk day, with company, near your favorite hearth.
